Indicative Title of Research Project: Comparative study on freeze-dried cheese and ripening starter cultures for domestic production - storage stability assessment
Applications are being invited for a Masterate Scholarship at the Institute of Food, Nutrition and Human Health, Massey University, Palmerston North. The successful applicant will work on a collaborative Research & Development project between Massey University (Albany Campus) and I-Make Ltd in Albany, Auckland.
Project brief
I-Make Ltd has launched a range of cheese-making kits for domestic production and export under the Mad Millie™ brand. Freeze-dried cheese and ripening starter cultures are key elements of these kits.
The cultures are currently stored out of the kit at -18°C to ensure they remain active for a long period, up to 2 years. This specific storage condition is restraining sales and distribution. Based on observation of our competitors, yogurt-making kits use freeze-dried which are shelf-stable for 2 years; this therefore leads us to believe that cheese starter cultures could well behave in the manner.
Academic Requirements
A good Bachelor’s degree with honours in science or engineering, or approved similar
qualification, is required. Experience in conducting independent research would be advantageous. The candidate should be highly organised, self-motivated and have an appetite for research. The position is based at the Albany Campus, but the successful candidate will be required to spend some time at the company. I-Make is located about 3 km from Institute of Food Nutrition and Human Health in Albany. Candidates need to be available to start as soon as possible. Eligible international students are encouraged to apply.
There is a potential MSI Scholarship of NZ$20,000 stipend plus $1,000 for travel.
