Overview
VLIR-UOS awards scholarships to students from developing countries so that they can follow a training programme in Belgium. These scholarships cover all related expenses. Every year, VLIR-UOS awards up to 70 scholarships to training participants.
Programme content
The training will provide theoretical and practical knowledge on the composition and processing of milk and dairy products. Emphasis will be laid on various possibilities for local processing in developing countries and on small scale processing with appropriate technology. Together with a fundamental scientific approach, the whole chain approach will be stressed: starting from milk collection, transport and processing to distribution. Throughout the whole training course, novel ideas in chemistry, physical chemistry, technology, hygiene and quality concepts of dairy products and dairy processing will be explored.
The topics covered in this course are: milk production, composition and physical properties of milk, microbiology of milk, milk collection and reception, processing of consumers milk, cream, butter, butter oil, fermented products, cheese, powders, ice cream, case studies concerning milk production of developing countries, food safety aspects, membrane processing,…
