Ph.D. position in Improvement of Meat Quality

At the Department of Chemistry, Biotechnology and Food Science (IKBM) we have a vacancy for a Ph D position. The position is for 3 years, but can be prolonged up to 4 years by carrying out other activities for the department.
The Department of Chemistry, Biotechnology and Food Science (IKBM) has 140 people employed. This Ph D position defines a strategic initiative to strengthen collaboration between Department of Animal and Aquaculture Sciences (IHA) and IKBM.
The PhD scholar will be formally affiliated with IKBM but will be encouraged to work also at IHA. Students who are willing to stay with Animal Science Department at Iowa State University, Ames, USA for 6 months will be given priority.
The project
Copper reduction in feeds have been shown to affect mitochondrial proliferation (increases number) and in addition upregulation of collagen type III, elastin and fibronectin synthesis. In addition, lipids accumulate in the mitochondria so post mortem oxidation may be affected. The symptoms of copper deficiency depend on the age of onset, meaning that it is most severe for newborn. Copper deficiency in ruminants can be caused by copper-poor grazing lands or copper-poor feed.
In the project we will look at changes in mitochondrial physiology, colour stability, oxidative stability and tenderness. The food (meat) model will be legs of laying hens.
Main tasks
The appointed person should work with research issues related to quality improvments (tenderness, colour and oxidative stability in meat “models”.
Methods to be used:
• Animal feeding
• Meat biochemical, physiological and quality measurements.
The position requires that you enter an approved program for Ph D Education aiming at a dissertation after 3 or possibly 4 years depending on other activities carried out National regulations for Ph D education at Norwegian Universities will be used.
Eligible Candidates
We are looking for a dedicated and motivated candidate with a Master Degree in food science or animal science. Only candidates with good college grades will be considered.
Priority will be given to students who have worked with any of the below: mitochondrial physiology, colour stability, oxidative stability and tenderness for their master projects.

Potential candidates should have a strong interest in
• Laboratory work
• Food quality
• A carriere in research
UMB wants to recruit more women in scientific positions, If two ore more applicants have close qualifications, a woman takes priority.
Salary
The salary will be Norwegian kroner 29 616,70, per month. The salary can increase in accordance with general, annual adjustments.
A Ph D position is for a defined period at the University and employment after Dissertation cannot be claimed.
